Isomalt is a beautiful and versatile medium that can be made into a sweet treat like lollipops, but also used as décor on cakes and cupcakes. Join sugar artist Sidney Galpern in this video to learn three different techniques to make edible décor for “Under the Sea” themed cupcakes.

To get started, Sidney gives a quick overview of Isomalt, how to color and flavor your cupcakes, and of course, a couple of safety precautions. Casting Isomalt in silicone molds is one of the quickest and easiest ways to capture tons of depth and detail without a lot of work.

In this lesson, Sidney casts two beautiful mermaid tails and several seashells. Then she switches up her method by incorporating a couple of metal cookie cutters for a more simplistic edible décor piece. Just don’t forget to use her easy prepping technique properly to ensure those pieces come out of the mold seamlessly.

And last but not least, Sidney shares a fun technique of drawing into sprinkles to create a textured coral that is a perfect addition to any under-the-sea-themed treats. You will be amazed by how easily the Isomalt releases from each of these different methods of molding revealing gorgeous sugar décor.
