In this lesson, Rachael teaches you the process of using a template as a guide for creating multiple cake designs with minimal effort. While there are a variety of ways to use Rachael’s templates to create cakes, she will first show you how to use cutters for a super clean look. She starts with the simplest of the four characters, the polar bear.
There are several ways to create the base cake of each character. In this lesson, Rachael will talk you through using buttercream, fondant, and even covering your cake in sprinkles for a unique finish before adding the additional elements to each cake. Then she shows you how to create a carrot nose, fluffy earmuffs, and some coal before showing you how to use the template for placement.
Building on the techniques you have learned in previous lessons; Rachael adds layers of dimension using both flat and three-dimensional elements to create a reindeer. The template is used in a new way during this lesson as she shows you how to cut through the template and modeling chocolate in one pass. This technique saves time.
When making a group of cakes it is important to think about colors. In this lesson, Rachael shares the principle behind color choices and how to use the same family of colors through all your cakes. And because the templates are so versatile, she shares yet another way to use the template with a trace and cut method that can be done with a paring knife. Then learn to create a beak simply by using your fingers.
In this final lesson, Rachael teaches you how to create five different accessories that can be mixed and matched on your character cakes. Using a variety of techniques, she will show you how to add texture to a scarf with an impression mat, shape a branch with a bird, string a wire with lights, form a bow, and cut a bough of holly. Then watch as our frosty winter friends are adorned with their festive accessories.

Along the way she will give you alternative design options for making and adding each individual element for these cakes. You will learn her tricks for making these designs efficiently, cutting objects with soft edges, and how to use wires to add structure.

Rachael grew up baking in the kitchen with her Hungarian grandmother, but she didn't discover her passion for cake decorating until later in life while seeking a creative outlet from her day job. She always had artistic interests, so cake decorating seemed like the perfect activity after a long day working as a Physical Therapist. Rachael launched Intricate Icings Cake Design in 2006 and quickly became known for creating cakes that were both delicious and beautiful. She enjoys translating any type of inspiration into an original cake design striving to think outside the box, explore new techniques, challenge her design skills, and push the limits of creativity! Intricate Icings is best known for their bridal gown-inspired cakes and more recently, the Geode Cake trend which took hold quickly over a large geographic band making it one of the most recognizable design concepts in recent years. Rachael's work is now nationally recognized and can be seen on episodes of <em>Food Network Challenge</em> as a competitor as well as on Hulu’s <em>Baker’s Dozen</em> and Food Networks <em>Buddy VS Duff</em> as a Judge!
