Is it cake or the real thing? Hear all about Elisa’s first burger cake and how you can make one for yourself. You will learn why this is such a great cake to make as a hyper realistic cake.
In this lesson, Elisa discusses the size of cake and how to use a template to guide the stacking process. She then splits, fills, and stacks up the layers to form the bottom bun with the burger and a separate top bun layer. You will learn how to carve each of the layers to take on the proper shapes. Then each tier gets a crumb coat of Swiss meringue buttercream before they are chilled.
Covering the burger and bun can be accomplished in a few ways. Join Elisa in this lesson to learn how to cover the burger using an over-the-top method that conforms well to the shape of the burger. As an alternative, Elisa demonstrates the “strip” method to cover the bottom bun. Use whichever method works best for you then emboss with mats, tin foil, a paring knife, and your best tool… your hands to create a realistic texture will bring these items to life.
Using a combination of gel colors and powdered dusts, Elisa shares the best way to color the burger and bun to add depth and dimension to objects. She will teach you how to add shine where necessary while keeping other areas matte for a dry crusty look.
Customize your burger with realistic looking veggies like lettuce, onion, and tomatoes. In this lesson, Elisa demonstrates how to use a combination of real items and leaf molds to create wafer paper lettuce. Next, she creates onions with layers of wafer paper and paints the perfect color of “red onion” before layering them together. And finally, she shapes modeling chocolate into a tomato and completes the look with seeds and gel.
In this lesson, you will learn how to add more toppings to the burger including cheese and ketchup with a realistic shine. Then, place structural support in the cake to prop up and secure the top bun. Elisa puts the final touches on the burger adding the lettuce, onion, and tomatoes for the perfect deluxe cheeseburger. Elisa Strauss founded Confetti Cakes in 2000. She is a graduate of Vassar College and The Institute of Culinary Education, where she received a degree in pastry and baking arts. Elisa also spent one semester studying at the Art Institute of Chicago. Prior to culinary school, she worked as a designer for Ralph Lauren. In fact, it was a cake she made for Ralph (in the shape of a Bugatti, his favorite sports car) and the heaps of praise it received from fashion industry notables that inspired her to bring her design talents to the kitchen full-time. Her creations have appeared on the Today show (one of her cakes was selected as the winner of the “Today Throws a Wedding” series), Sex and the City (she made Charlotte and Harry’s wedding cake during Season Six), The View and Martha. Elisa has also been featured on The View, and has appeared several times on the Food Network, including the “Extreme Cake Challenge” where she won the grand prize. Confetti Cakes has also been featured in InStyle, Martha Stewart Weddings, Marie Claire, Seventeen, Elle, Vogue, Modern Bride, New York magazine, BRIDES, Elegant Bride, The Knot and in 2008 was selected as one of America’s Top Ten Pastry Chef’s in Pastry Art and Design. Elisa’s first book, The Confetti Cakes Cookbook: Spectacular Cookies, Cakes and Cupcakes from New York City's Famed Bakery, was released in Spring 2007 and is in its seventh printing, and her second book entitled Confetti Cakes for Kids was released in the Fall of 2008. Along with Marvelous Molds she has created a line of fashion cake decorating products. She currently teaches private cake decorating lessons in her studio and teaches online classes at Craftsy.com.
