Join Rachael Teufel as she shares some of the key techniques you will be learning in this class to create coloraful design with buttercream. She will cover everything from trimming the cake, crumb coating, and final coating to prepare the cakes for three methods of buttercream application including cake comb designs, acetate wrapped design, and etched designs.
In this lesson, Rachael will teach you how to trim your cakes to make space for buttercream during the crumb coating process. Then learn the proper technique for applying buttercream to your cake to lock in those pesky crumbs. Rachael shares a few tips and tricks along the way to help you achieve the right thickness of icing and those perfect 90 degree edges.
Applying the right amount of buttercream is key when using a cake comb. In this lesson Rachael demonstrates how to apply buttercream to crumb coating using the board method to guide the thickness. This technique results in a perfect final coat, but she takes this process a step further by using a cake comb to create a linear pattern within the buttercream. You can stop here for a textured look or continue on by filling the pattern with color and performing a final scrape to achieve a colorful design.
In this lesson, you will learn the basics of creating an etched buttercream design. Rachael will teach you how to apply buttercream in multiple layers using four different colors. Then, she will show you how to use modeling tools to etch out buttercream, revealing the beautiful colors below. Along the way she will share tips for measuring and transferring the design template, how to adjust the depth of the etched design, and how to fix mistakes along the way.
Any design is possible by utilizing an acetate sheet, a printed pattern, and some buttercream. Join Rachael in this lesson as she takes you step by step through the process of creating a buttercream transfer. You will learn how to choose the right pattern, pipe the pattern onto an acetate sheet, how to backfill the pattern, and finally how to apply the acetate wrap to a crumb coated cake.
Adding additional decor to a cake can be as simple as a flat applique. In this lesson, Rachael shares an easy way to trace and cut out a turtle using two methods.
Now that all of the cakes are iced and the appliques are cut, it is time to assemble the tiers and add the final touches. Rachael will share an easy method of doweling using straws and offer a few other suggestions for supporting stacked cakes. Then watch as she carefully places the tiers and moves them into place. And finally, see the addition of two turtles that add a touch of whimsical underwater fun.

She always had artistic interests, so cake decorating seemed like the perfect activity after a long day working as a Physical Therapist.
